I halved 6 peaches and placed in a bag with 12 whole fresh strawberries. To that I added a 1/4 cup balsamic vinegar and 1/4 cup honey. This sat for around 2 hours. After that I fried the peaches cut side down in a little butter and brown sugar until they got nice and brown. I put them in a baking dish cut side up wih a strawberry in the hollow. I deglazed the pan with a little port and poured over the peaches. The rest of the marinade went into the baking dish along with some almonds and cranberries.
When I was ready to finish the dish I baked it uncovered until the marinade started to thicken. Every once in a while I spooned some over the top. For the last ten minutes or so I sprinkled some granola over the top for texture.
I served them warm over a couple of spoons of vanilla yogurt.
I still have 4 peach halves in the fridge *wink*
